NEHA food safety experts Melissa Vaccaro and Ashley Miller connected with EatingWell on which foods can become unsafe after just a few days and how proper cooling and storage can help prevent foodborne illness.

According to Miller, “Small portions or shallow pans of warm rice can and should be refrigerated promptly. The old advice to leave rice out until completely cooled is outdated and can increase food safety risk.”
