What’s cooking at the library?
Summer Smoothie
3 Servings

1 cup plain yogurt
1 banana, frozen
1 ½ cup frozen sliced peaches or other fruit*
¾ cup orange juice
Honey, if desired (a small sq**rt)
Ice cubes, if needed

Blend all ingredients together until smooth. Add ice cubes, if needed, at the end. Blend until ice is crushed.
*You can substitute any fruit. Frozen is best, but you can use fresh if that is what you have.

What’s cooking at the library?
Omelet in a Mug
2 eggs, beaten
3 Tbsp. shredded cheese
2 Tbsp. diced fully cooked ham, sausage, or bacon bits
1 Tbsp. diced green pepper, onion, or other add ins
Salt and pepper to taste

In a microwave safe mug coated with non-stick spray, combine ingredients. Microwave, uncovered, on high for 1 minute. Stir. Cook 1 to 1 ½ minutes longer or until eggs are completely set.

What’s cooking at the library?
Bacon Ranch Salad
12 oz. package bacon
8 oz. cavatappi pasta
½ cup mayonnaise
½ cup sour cream
½ cup buttermilk
1 Tbsp. dried parsley
1 Tbsp. dried di****ed
1 ½ Tbsp. lemon juice
1 tsp. minced garlic
1 tsp. black pepper
1 pint grape tomatoes, halved
6 oz. cheddar cheese, cut in ½ inch cubes
1 cup frozen peas, thawed
1 can sliced black olives
2 green onions, thinly sliced

Cook pasta according to package directions. Drain and cool.
Cook bacon until it is crispy. Let it cool then crumble up into bite sized pieces.
In a large bowl, whisk together the mayonnaise, sour cream, buttermilk, parsley, dill, lemon juice, garlic, and pepper. Add the cooled pasta, and the rest of the ingredients. Toss to combine.
